You can never have too much of a vegetable

In case you get “tired” of an item, we remind you that the share boxes reflect the natural rhythm of Nature’s harvest. By mid-summer, you might be tired of zucchini. By fall you might be tired of cabbage, etc.

The answer is preserving, e.g. canning or freezing.  Check out a book called Saving the Seasons: How to Can, Freeze, or Dry Almost Anything.

Another resource is Serious Eats and an article with the intriguing title The Crisper Whisperer: 10 Secrets for Making the Most of Your CSA. Rhubarb, for example, can be rinsed, chopped and frozen for later pies, crisps and crumbles. For other tips, please read the FAQ section of the website.

Thanks,

Erin
