What to do with weird vegetables

Yes, you can eat radish greens. They are spicy and good in a salad. You can also cook the greens from the kohlrabi, just as you would turnip greens.

You can make a puree with parsnip, kohlrabi, potato and leek or garlic. Delicious. Just skin, steam until tender, blend, add butter and salt. Better than mashed potatoes from my point of view.

    I got 2 bunches of radishes this week and haven’t finished the ones from last week. Is there anything I can do with them other than slice them for salad?

    Radishes can be sauteed with garlic and a dash of balsamic vinegar, topped with a few pine nuts & some grated romano. You can include the greens when you cook them this way. Epicurious has several recipes for cooked radishes.

    Kohlrabi & Apple Salad: peel a kohlrabi bulb and cut it into julienne strips. Cut a small apple (granny smith or crisp red) in julienne strips (don’t peel it). In a bowl, mix 1/2 c nonfat plain yogurt, 1 TBSP coarse grained mustard, 1 or 2 tsp curry powder, and 1/2 cup of mixed walnuts & raisins. Add the julienne strips and stir. Sprinkle with grated nutmeg. Makes 2 medium servings.

    Here’s another one that came out great! Kohlrabi & Celery salad: julienne one kohlrabi bulb and thinly slice 2 celery stalks. Mix a TBSP. of Dijon mustard, 2 TBSP. of lemon juice, 1/3 cp. of olive oil, 1 clove garlic, minced, 2 TBSP. plain yogurt and some parsley. Add 3 TBSP. of capers and toss with the vegetables.
