We had some ‘hail-like’ precipitation – we can tell by the torn tree leaves, etc.
Those pesky tomatoes – we won’t know for another 24-36 hours – you folks hopefully won’t see it – we will just have a gazillion tomatoes to make into sauce, juice etc. This is the second MAJOR set back with the maters’ – remember those 4 days in June when it was a 100 each day – when the temp goes over 80 & stays there – the blossoms drop off – tomatoes & a whole host of other things.
So we had a Gap in the maters & now we have to much rain which causes them to swell & burst & ultimately rot – unless you are here to pick very early in the a.m. – clean, sort & make into juice – not everyone’s idea of fun.
HOWEVER – I WILL SHARE WITH YOU MY SPECIALLY GUARDED, DELUXE TOMATO JUICE RECIPE – EASY FOR ANYONE WITH A STOVE THAT WORKS & A PAN
This is a suggested recipe – you may delete items (except the tomatoes) & still have a very good long tall drink.
Take a large pan – like a pan you would cook pasta in – or cook corn – 6-8 – or larger quart pan. If you don’t have a big pan – don’t sweat it – just use a smaller one & adjust accordingly.
- Wash some tomatoes – any size – any variety – any color – mixing is GOOD.
- Coarsely chop – you can even just sort of tear w/your hands ( think easy )
- Make about 6-8 -10 cups or so – place into your pan
- Take 1-2 or 3 sticks celery – depending on how many tomatoes you have – coarsely chop & add to pan
- Take one medium ( or large, depending upon the size of your lot) onion – sweet is good.
- Coarsely chop & add to the pan
- Juice of 1 or 2 lemons – then throw in the lemon rind
- 12 – 14 cloves – throw those in the pot too (this is the secret ingredient – LOL)
- Cover pot
- Cook all this stuff until the juices run – slow & low – a few hours – don’t hurry it
- You can do this – stovetop , slow cooker(crock pot), oven – just keep it covered so the juice doesn’t evaporate.
- After a few hours – put mixture thru a sieve (colander will work, but sieve is better)
- Drink hot, warm or cold
- Refrigerate any un – how can you have any left over’s – ????
- This also freezes well –
If you would like canning instructions – please email & we can talk about that
This may be used as a tomato juice drink, soup base, sauce base – good for anything tomato.
Thanks a bunch,
Pam
